Application of metabolomics to study the relation between food and health

Recent progress in high-throughput analytical technologies i.e. metabolomics allows the simultaneous analysis of the hundreds or more metabolites constituting the metabolome (pool of body metabolites) in biofluids and tissues using NMR, LC-MS, and GC-MS.

These analyses can provide complex metabolic fingerprints characteristic of a given dietary intervention on metabolome. Delineating the characteristic changes exerted in the metabolome by an intervention can help to explain the beneficial effects of the intervention on health. The beauty of metabolomics relies on its potency to describe the effects of diet on metabolism because it can assay many metabolites in a single sample analysis compared to traditional approaches focusing on one specific biomarkers and prior hypotheses.
