Research projects

Yeast is part of daily food for humans and animals. Fermentation, as a type of yeast energy metabolism, modifies food e.g. by conversion of sugars to alcohols or acids. This can lead to food spoilage or to significant improvement of the nutritional quality, taste and smell. Yeasts growing on fruit are a major diet of the fly Drosophila melanogaster, which is attracted to volatile fermentation products. The fly-yeast model is used to study the link between food quality and signalling food odours.
