The goal is to conduct a risk profile for fresh vegetable foods that serve as alternatives to foods of animal origin.

Background

The consumption of fresh vegetable foods that replace foods of animal origin is increasing, and there is a wide variety of products and brands available at retail. This is a trend observed throughout the EU.

EFSA, together with EU member states, will conduct a risk profile for this type of food products to obtain better data on potential health risks associated with them.

This project will represent Sweden's contribution to the larger EFSA-funded initiative.

Project description

The project involves collecting food samples at retail level and conducting analyses at the microbiological food laboratory at the Dept of Animal Biosciences.

Within the project, selected pathogens (such as Listeria and Bacillus) will be examined, along with pH and water activity. The food products consist of fresh vegetable-based items that replace animal-derived foods, such as plant-based cheeses, dairy alternatives, and sandwich spreads. The products will be analyzed at their best-before date.

You will also assist with registering the results in the EU project database.

Specifications

You must be meticulous and prepared to independently perform food microbiological analyses under supervision.
