The objective of the project is to develop a set of Nordic diets based on the concept of producing livestock on ‘ecological leftovers’ (Garnett, 2015; Garnett, 2009; Röös et al., 2015). In this approach the ecological resource capacity is the constraining factor for livestock production, i.e. animal feed is restricted to feed resources not suitable for human consumption, such as grass from marginal land unsuited for other production and by-products from crop production and food processing, thus also recycling resources and managing landscapes. 

This concept was operationalised for Swedish conditions by Röös et al. (2015). This project will develop diets for the Nordic context for the year 2030 based on this principle and following the methodology and data used in Röös et al. (2015) with some modifications.  Diets for each country (Sweden, Finland, Denmark and Norway) will be developed as well as one diet for the whole region. Environmental assessment of the diets will be performed as well as a quantification of the need for nutrients to be recycled.
Nutritional aspects and expected health outcomes will be studied in a Master Thesis project in cooperation with KI.
