Quantitative microbial risk assessment
While most examples will include microbial assessments, we will also use examples of chemical contaminations. The students will be given example data sets to work with, but will also be encouraged to use their own data when applicable.
The course will consist of a pre-course module, an intensive course week in Uppsala, and a postcourse assignment.
Pre-course: Materials to read, 1 day of work.
Course week: Lectures and exercises, 1 full week of work
Post-course: Writing and submission of a report, approximately 4 days of work.

After completing the course, the student shall be able to:
Describe and explain the differences between hazards and risks
Describe the different frame works for risk analyses
Be able to conduct qualitative as well as quantitative (stochastic and deterministic) risk assessments
Innehåll
This course will teach how to conduct a risk assessment according to the OIE and the Codex alimentarius frameworks. The course will teach the concepts of hazard analyses, hazard characterization, dose-response relationships, exposure assessment, and conducting qualitative and quantitative risk assessments using tools such as RiskRanger and @Risk. In addition, the course will touch on the topics of risk management and risk communication.
