Entry Requirements
15 credits basic knowledge and skills in general, organic and biochemistry. At least 5 credits of the 15 must be in organic chemistry.
Exemption from entry requirements in Swedish.
Objectives
After completed course, the student will be able to:
- describe the names, structures, characteristic properties, occurrence, biosynthesis, as well as suitable methods for the analysis, for the majority of the most important groups of natural products as well as for chemical structures found in food.
- describe the principles for some of the more common methods for chemical analysis and separation.
- execute and interpret data from experiments based some of the more common methods for chemical analysis and separation.
- analyse, report and present chemical results both in written and in oral form.
Content
Lectures, seminars, exercise sessions and laboratory work are used during the course. Course introduction, laboratory introduction, laboratory work, execution of project work as well as presentation of the project are compulsory activities.
Properties, such as names, structures and reactivities, occurrence and biosynthesis, of the following groups of natural products and chemical structures often found in food stuffs will be covered in the course:
- carbohydrates
- amino acids
- peptides/proteines
- nucleic acids
- fatty acids
- polyketides
- terpenes
- steroides
- phenylpropanoides
- alkaloides
In addition, the following techniques for isolation and analysis of natural products will be covered:
- extraction methods
- chromatography (GC, HPLC, TLC, etc.)
- spectroscopy (NMR, MS, UV/VIS, IR, etc.)
Each student will participate in a small project in which a compound found in e.g. Nature or in food stuffs will be isolated, purified, characterised and/or quantified.
Examination Formats and Requirements for Passing the Course
Passed written final exam, passed oral and written reports of the project, passed compulsory laboratory reports and active participation in other compulsory activities

The prerequisites can be fulfilled by having followed the courses KE0062, KE0063 and KE0064 and:
i. having passed course modules corresponding to at least 15 credits within the courses mentioned above
and
ii. having passed course modules corresponding to at least 5 credits in organic chemistry
The course is given in Swedish if only Swedishspeaking teachers and students participate.
