Presentation

I have always been interested in the behaviour of materials, from why egg whites foam to how plastics break or how high tempearure superalloys survive in jet engines. This interest, coupled with a desire to address environmental aspects of current non-degradable plasics, has led me to work with plant protiens as a renewable and biodegradable alternative to current plastics. This  has led to investigations of new sources of protein for food, addressing food security, climate change and the ongoing shift from animal protien to plant protien for human consumption. In all these cases I am interested in the relationships between molecular strucuture and functional properties.
