I study wheat composition in relation to quality, flavor, and potential health-related aspects. My work involves analytical techniques such as HPLC and LC-MS QTOF for compound characterization and profiling. In addition, I explore the use of germination and fermentation processes to improve sensory attributes and functional quality.
