Associate Professor in Food Science. Investigates factors regulating food quality, focusing on plant-based foods, meat, and fermentation processes to develop products with improved nutritional and sensory properties.

Presentation

I  graduated as a Biologist (Samara State University, 1993) and obtained a PhD in Food Sciences at Swedish University of Agricultural Sciences (2004).  My research focus on the factors affecting food quality, especially plant-based food. I am also interested in food consumption in relation to human health. I regularly communicate my research results in the form of scientific and popular articles as well as international conferences. I published >120 peer-reviewed articles (h-index 36 in scopus).

Research

Research interests include detailed investigation of factors influencing food structure at the micro- and macro-levels and how these relate to nutritional quality, sensory properties, and food consumption effects on human health. This research encompasses characterization of plant-based foods, meat, and fermented products by physico-chemical and structural methods, aiming to design food structures with targeted health and sensory benefits. Work also includes studying process design to optimize food product quality and bioavailability of nutrients, as well as exploring sustainable food sources such as ancient cereals and underutilized crops like buckwheat. Additionally, the research extends to understanding the interaction of food microstructures with environmental factors including digestion and assimilation in the human body.
