We conduct research to reduce food waste and make the food chain more resource-efficient. The focus is on developing methods to measure and reduce food waste throughout the food chain, and on calculating how food waste-reducing measures can reduce environmental impact, save money and contribute social value. By analyzing how food is handled and consumed, we can identify strategies that reduce waste in households, commercial kitchens and trade. Another important area of research is how side streams from agriculture and food production can be utilized instead of becoming waste. By finding new ways to use, for example, leftovers from vegetable crops or surplus bread, we can contribute to creating a more sustainable food system.
