Anna Stubbendorff’s doctoral research explores the relationship between environmentally sustainable dietary patterns and human health. Using data from large Swedish cohorts, her work examines how diets with lower climate impact are associated with risks of major chronic diseases, including cardiovascular disease, type 2 diabetes, cancer, and mortality. A key aspect of her research is the evaluation of the EAT-Lancet reference diet, also known as the planetary health diet, in relation to both health outcomes and nutritional adequacy.

A central focus is whether diets aligned with the planetary health diet can support sufficient micronutrient intake and status, addressing concerns about potential nutritional trade-offs. By integrating nutritional epidemiology with sustainability metrics such as dietary greenhouse gas emissions, her research highlights the potential for dietary patterns that are both health-promoting and environmentally sustainable.
