Production and processing of fruits, berries and grapevine
Trots sina unika biologiska förutsättningar har frukt, bär och vin som fleråriga kulturer även många gemensamma beröringspunkter. Att producera dem i nordiskt klimat, som utgör en gränsståndort för många fruktslag och vin, medför en utmaning och ställer särskilda krav på odling och odlingstekniskt kunnande. Denna kurs utgår från produkten och dess användning, t.ex. färskkonsumtion eller råvara för processindustrin och belyser på ett fördjupat sätt de olika odlingstekniska metoder som leder fram till avsedd produkt.
Information from the course leader
Välkommen till årets kurs som kommer att vara både campusförlagd med studentprojekt med tunnelodling av bär. I projekten som dels tar upp växtnäring dels tar upp plantkvalité kommer ni att få driva dessa projekt under kursen, de planteras under sommaren för att plantorna ska nå skördestadie att mäta på skörd och skördekvalité mm under kursperioden. Pomolgin kommer också att ges på campus.
Beroende på tillgång av lokaler och corna resriktioner kommer föreläsningar gå via zoom samt på campus.
Kursen kommer att examineras med skriflig tentamen, skrifliga och muntlig redovisning av seminarie, produktionsplanering, projekt och pomologi.
Vi ser framemot att se er i zoom och mer på campus.
Schema kommer att läggas upp inom några veckor.

The course is a continuation course that covers biological, technological, economic and quality issues in fruit, berry and wine production and processing. The course covers the ecological requirements of the target crop and the impact on the environment, infrastructure, cultivation techniques, crop protection and quality management in different cultivation systems. The physiological and technological basics as well as yield-determining measures and predicted yield are dealt with. Production is also studied from an economic and social sustainability perspective.
On completion of the course the student should be able to:
evaluate the specific needs of the growth site and the culture, and the impact of the culture on the environment
describe the specific morphological and physiological properties of vines, fruit trees and berry bushes, and to link them with the cultivation systems and cultivation techniques
describe specific requirements for different cultivation systems and be able to discuss methods for establishment, cultivation and harvest
understand and apply how plant growth, yield and product quality are affected by measures applied in cultivation, and show understanding of yield-determining measures and yield forecast
describe methods for storage of fruit and berries
understand the economic conditions for the production planning of perennial horticultural crops
have a comprehensive understanding of quality criteria and food hygiene in the further processing of fruit and berries.

Preconditions, from an economically and socially sustainable perspective, for the production of grapes, fruits and berries, in tunnel and greenhouse in colder climate
Cultivation environments (climate and plant material) suitable for the production of grapes, fruit and berries and how the conditions can be modified by cultivation management
Pomology of the most commonly produced fruits in Sweden
Review of different production orientations
Economic planning for fruit, berry and vine production, and analysis of the plan, risk assessment and measures
Seminars on key issues in fruit, berry and vine production from sustainable, economic and social perspective
Applied processing of fruit, berries and grapes
Scheduled practicals, excursions and seminars are obligatory.
Grading form
The grade requirements within the course grading system are set out in specific criteria. These criteria must be available by the course start at the latest.Formats and requirements for examination
The examination consists of written and oral examination. To pass the course, a pass grade in the examination and approved participation in the obligatory moments are required.
- If a student has failed an examination, the examiner has the right to issue supplementary assignments. This applies if it is possible and there are grounds to do so.
- The examiner can provide an adapted assessment to students entitled to study support for students with disabilities following a decision by the university. Examiners may also issue an adapted examination or provide an alternative way for the students to take the exam.
- If this syllabus is withdrawn, SLU may introduce transitional provisions for examining students admitted based on this syllabus and who have not yet passed the course.
- For the examination of a degree project (independent project), the examiner may also allow the student to add supplemental information after the deadline for submission. Read more in the Education Planning and Administration Handbook.
