The environment and a healthy diet – not a simple equation

Welcome to a lunch seminar arranged by SLU Future Food. Lena Hulthén and Ingrid Larsson will describe and discuss the challenges of combining healthy diets and a low environmental impact of food consumption.

What are the nutritional limitations of different diets and what are their effects on vulnerable groups? What is the scientific evidence of different diets? What could a healthy diet with limited negative environmental effects look like?

The seminar will be held in Swedish.

Lena Hulthén is professor emerita in clinical nutrition at the Sahlgrenska Academy at the University of Gothenburg, with focus of her research towards minerals and the impact of the diet on health and disease.

Ingrid Larsson is associate professor in experimental clinical nutrition at the Sahlgrenska Academy at the University of Gothenburg with focus of research towards severe obesity. She is engaged in different projects on healthy dietary habits.
