Pike Perch: Seared butter sauce, spinach, egg, anchovy, roasted panko and confit winter potato

Reindeer: Reindeer thick flank, thyme sauce, roasted Jerusalem artichoke, savoy cabbage puré, blackberry, lingonberry

Endive: Roasted endive, sweet potato purée, sage, kale, pumpkin seeds and sour cream quark
